What makes this recipe super enticing is that you will be soaking the raisins in rum (for at least ½ hour) before adding them to your baked bread pudding dessert recipe.

AND, you’ll be topping it off with some chopped maraschino cherries.

Ok, so this is possibly the EASIEST Jamaican bread pudding cake recipe I found!

The recipe is by YouTuber Cook Like a Jamaican and at the time of this writing the video has 56,674 views and 926 “likes”.

These are the ingredients you’ll need:

  • 10 slices of crusty Italian bread (any white bread would work)
  • 3 cups of milk
  • 1 cup of margarine or butter
  • 2 teaspoons of cinnamon
  • ½ teaspoons of allspice
  • ½ teaspoon of nutmeg
  • ½ teaspoon of salt
  • ½ cup of raisins
  • ¾ cup of white sugar (brown sugar is OK)
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of rum
  • 6 eggs

Ingredients for Jamaican Cassava Pudding

In case some of you may not be familiar with Jamaican cassava pudding, other names for it are cassava pone, cassava cake, or yuca cake

(Like me, some of you may be more familiar with the term yuca for cassava).

It’s a very popular Jamaican dessert that you make with grated cassava, coconut milk, and spices.

Now for the most common ingredients in Jamaican cassava pudding recipes:

  • Cassava
  • Coconut milk
  • Vanilla extract
  • Almond extract
  • All-purpose flour
  • Coconut flakes
  • Sugar
  • Baking powder
  • Cinnamon

A Little About Cinnamon

According to the Cleveland Clinic, cinnamon has anti-inflammatory properties, it may help reduce blood sugar levels, and it may help reduce cholesterol.  

So, although these Jamaican desserts contain a lot of sugar, maybe we can use the fact that they use cinnamon as a good reason to consume? Maybe? Ok, maybe not, haha.

Keep in mind that although this is a vegan Jamaican cassava pudding recipe, you can definitely make it non-vegan by using regular all-purpose flour and by adding butter, too.

Also, this recipe developer uses a blender, but you can definitely use a box grater to grate your cassava root (this is the traditional way) if you don’t have a blender or food processor available (as stated on the page).

Also, to save some time, the recipe developer states that you can make the batter a day ahead.

Jamaican Yuca Pudding Cake Recipe #2

This is an easy Jamaican cassava pudding recipe by YouTuber How to cook CHANNEL.

FYI, these are the ingredients you’ll need to make this recipe:

  • 1 ½ lb of cassava
  • 1 ½ cup of brown sugar
  • ½ cup of coconut flakes
  • 1 can of coconut milk
  • 1 cup of water
  • ½ cup of cornmeal
  • ½ cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon powder
  • ½ teaspoon of nutmeg
  • 1 teaspoon of salt
  • 1 teaspoon of almond extract
  • 1 tablespoon of vanilla extract

(Before I forget to state this,  let me tell you that this is the recipe I used for the pictures I have included in this post. The cornmeal I used was Quacker’s Yellow Corn Meal and it worked out PERFECTLY.)
